Chocolate Maraschino Cherry Coconut Truffles

For the Crust:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup maraschino cherries, drained and chopped
  • 1/2 cup shredded coconut
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder (for dusting)

Instructions

1. Prepare the Crust:

  1. In a saucepan, heat the heavy cream until just simmering. Remove from heat and add chocolate chips, stirring until smooth.
  2. Stir in chopped maraschino cherries, shredded coconut, and vanilla extract. Mix well.
  3. Chill the mixture in the refrigerator for 2 hours or until firm. Roll into small balls and dust with cocoa powder before serving.
