For the Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C).
- Mix cookie crumbs and melted butter, press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla.
- Stir in melted chocolate until fully combined. Pour over crust.
- Bake for 50-60 minutes or until center is set. Cool completely before refrigerating for at least 4 hours.
