For the Crust:
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips, melted and cooled
- 1/4 cup cocoa powder
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Combine cookie crumbs and melted butter; press into bottom of 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Blend in sour cream, then eggs one at a time, then vanilla.
- Stir in melted chocolate and cocoa powder until fully combined. Pour over crust.
- Bake for 55-60 minutes until center is almost set. Cool completely, then refrigerate for at least 4 hours before serving.

You can customize the seasonings to taste.
