Ingredients
Scale
- 1 unbaked 9-inch pie crust
- 1 cup light corn syrup
- 1 cup packed brown sugar
- 4 tablespoons unsalted butter, melted
- 3 large eggs
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups pecan halves
- 4 ounces semisweet chocolate, chopped
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together corn syrup, brown sugar, melted butter, eggs, bourbon, vanilla extract, and salt until smooth.
- Place the pie crust in a 9-inch pie plate and sprinkle the chopped chocolate evenly over the bottom of the crust.
- Arrange the pecan halves evenly over the chocolate layer.
- Pour the filling mixture over the pecans and chocolate.
- Bake for 55 to 60 minutes, or until the filling is set and the crust is golden brown. If the crust edges brown too quickly, cover them with foil.
- Allow the pie to cool completely before serving to let the filling set.
Notes
For best results, use fresh pecans and high-quality bourbon. Letting the pie cool fully ensures clean slices and a firm filling. You can serve with whipped cream or vanilla ice cream for extra indulgence.
