Chicken, Cheese, and Zucchini Muffins

For the Crust:

  • 1 cup cooked chicken, shredded
  • 1 cup zucchini, grated and drained
  • 1 cup cheddar cheese, shredded
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, mix flour, baking powder, salt, and pepper.
  3. In another bowl, whisk eggs, milk, and olive oil. Stir in chicken, zucchini, and cheese.
  4. Combine wet and dry ingredients until just mixed. Do not overmix.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until golden and a toothpick comes out clean.

Notes

You can customize the seasonings to taste.
