			For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 2 tbsp lemon zest
- 1/4 cup lemon juice
- 1 cup fresh cherries, pitted and chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Alternately add the flour mixture and milk to the butter mixture, beginning and ending with flour. Stir in lemon zest and juice.
- Fold in chopped cherries. Divide batter evenly among cupcake liners.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
