- 2 cups granulated sugar
- 3/4 cup heavy cream
- 3/4 cup unsalted butter (170 grams; 1–1/2 sticks)
- 1/2 teaspoon salt
- 1 jar marshmallow cream (7 ounces)
- 2 cups chopped white chocolate or chips (12 ounces; 340 grams)
- 1–3/4 teaspoons cherry baking emulsion or extract
- 1–1/2 cups candied cherries, chopped, divided
- 1 cup dark or semi-sweet chocolate chunks, divided
Instructions
- In a medium saucepan, combine granulated sugar, heavy cream, unsalted butter, and salt. Heat over medium, stirring frequently until the mixture comes to a boil.
- Remove from heat and stir in marshmallow cream until smooth.
- Add chopped white chocolate and stir until completely melted and smooth.
- Stir in cherry baking emulsion or extract.
- Fold in half of the chopped candied cherries and half of the dark chocolate chunks.
- Pour the fudge mixture into a prepared pan lined with parchment paper.
- Sprinkle the remaining candied cherries and chocolate chunks evenly over the top and gently press them into the fudge.
- Allow the fudge to cool at room temperature until set, then refrigerate until firm before cutting into squares.
Notes
Cherry baking emulsion provides a more stable cherry flavor than extract; if unavailable, substitute with a small amount of almond extract and maraschino cherry juice. The fudge is best stored refrigerated and served chilled. This recipe yields about 36 servings and is perfect for sharing at parties or holidays.
