For the Crust:
- 1 package (14.1 oz) refrigerated pie crusts
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
- 1 egg, beaten (for egg wash)
- 1 tbsp coarse sugar (for sprinkling)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Unroll pie crusts and use a round cutter to cut 12 circles. Press each into a greased muffin tin.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth. Spoon about 1 tablespoon into each crust.
- Top each with a spoonful of cherry pie filling. Brush edges with egg wash and sprinkle with coarse sugar.
- Bake for 18-22 minutes until crust is golden. Cool in pan for 10 minutes, then transfer to a wire rack.
