Cherry Cream Cheese Mini Pies

Delightful individual mini pies with a creamy cheese filling and sweet cherry topping, perfect for parties or dessert.

For the Crust:

  • 1 package (14.1 oz) refrigerated pie crusts
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Unroll pie crusts and use a round cutter to cut 12 circles. Press each into a greased muffin tin.
  2. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Spoon about 1 tablespoon into each crust.
  3. Top each with a spoonful of cherry pie filling. Brush edges with egg wash and sprinkle with coarse sugar.
  4. Bake for 18-22 minutes until crust is golden. Cool in pan for 10 minutes, then transfer to a wire rack.
