Cherry Chocolate Dream Cake

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup whole milk, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 1 cup whipped cream
  • 1 cup chopped dark chocolate or chocolate shavings

Instructions

  1. Preheat the oven to 350°F (180°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. In a large bowl, whisk together cocoa powder and milk until smooth. Add eggs one at a time, whisking well after each addition. Whisk in vanilla extract.
  3. Gradually add the dry ingredients to the chocolate mixture, whisking until just combined.
  4. Divide the batter evenly between the prepared pans and smooth the tops.
  5. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. Once the cakes are cool, poke holes in each cake layer with a skewer. Spread cherry pie filling over the top of each cake layer.
  7. Top with whipped cream and sprinkle with chopped chocolate.

This cake is a simplified version of a Black Forest cake, using cherry pie filling for convenience. It’s perfect for Valentine’s Day or any special occasion.
