For the Crust:
- 2 cups grated zucchini
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup almond flour
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Squeeze excess moisture from the grated zucchini using a clean kitchen towel.
- In a large bowl, mix zucchini, mozzarella, Parmesan, almond flour, eggs, garlic powder, oregano, salt, and pepper until well combined.
- Spread the mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4-inch thick.
- Bake for 20-25 minutes or until golden and firm. Remove from oven and let cool slightly.
- Cut into breadstick-sized strips and serve warm.
