- 2 large potatoes or sweet potatoes
- 1/2 lb ground beef or turkey
- 1 packet taco seasoning (or chili powder + cumin + paprika + garlic powder)
- 1/2 cup shredded cheddar or pepper jack cheese
- Toppings: sour cream or Greek yogurt, salsa, avocado, chopped cilantro
Instructions
- Microwave or bake potatoes until tender (microwave about 8–10 minutes, flipping halfway).
- Brown the ground beef or turkey in a skillet, drain excess fat, then stir in taco seasoning and a splash of water.
- Slice open the potatoes, fluff the insides with a fork, and pile in the taco meat.
- Sprinkle cheese on top, let it melt, then add your favorite toppings such as sour cream, salsa, avocado, and cilantro.
Notes
For a twist, try swapping the taco beef for shredded buffalo chicken topped with blue cheese, or use black beans and corn for a vegetarian version. Adding a fried egg on top makes a great breakfast-for-dinner option.
