Cheesy Taco Potatoes

A simple and flavorful recipe featuring baked potatoes stuffed with seasoned taco meat and melted cheese, topped with classic taco toppings for a hearty meal.

  • Total Time: 25 minutes
  • Yield: 2-3 1x

Ingredients

Scale
  • 2 large potatoes or sweet potatoes
  • 1/2 lb ground beef or turkey
  • 1 packet taco seasoning (or chili powder + cumin + paprika + garlic powder)
  • 1/2 cup shredded cheddar or pepper jack cheese
  • Toppings: sour cream or Greek yogurt, salsa, avocado, chopped cilantro

Instructions

  1. Microwave or bake potatoes until tender (microwave about 8–10 minutes, flipping halfway).
  2. Brown the ground beef or turkey in a skillet, drain excess fat, then stir in taco seasoning and a splash of water.
  3. Slice open the potatoes, fluff the insides with a fork, and pile in the taco meat.
  4. Sprinkle cheese on top, let it melt, then add your favorite toppings such as sour cream, salsa, avocado, and cilantro.

Notes

For a twist, try swapping the taco beef for shredded buffalo chicken topped with blue cheese, or use black beans and corn for a vegetarian version. Adding a fried egg on top makes a great breakfast-for-dinner option.
