For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 8 oz penne pasta
- 2 tbsp Cajun seasoning
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook pasta according to package directions; drain and set aside.
- Season chicken cubes with Cajun seasoning. In a large skillet, cook chicken in butter over medium heat until no longer pink, about 6-8 minutes. Add garlic and cook for 1 minute.
- Pour in heavy cream and bring to a simmer. Stir in mozzarella and Parmesan cheeses until melted and smooth.
- Add cooked pasta to the skillet and toss to coat in the sauce. Season with salt and pepper as needed.
- Garnish with fresh parsley and serve immediately.
