Cheesy French Onion Chicken Casserole

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried thyme

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat butter and olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are caramelized (about 20 minutes).
  3. Add beef broth and Worcestershire sauce to the skillet, simmer for 5 minutes until slightly reduced.
  4. Arrange chicken breasts in the baking dish. Pour onion mixture over the chicken.
  5. In a bowl, mix Gruyère, mozzarella, Parmesan, and thyme. Sprinkle evenly over the chicken and onions.
  6. Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly and golden.
  7. Let rest for 5 minutes before serving.
