For the Crust:
- 2 cups cooked chicken, shredded
- 10 oz fresh spinach, chopped
- 8 oz mushrooms, sliced
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and garlic, sauté until mushrooms are tender, about 5 minutes.
- Add spinach to the skillet and cook until wilted. Stir in chicken, Italian seasoning, salt, and pepper.
- Pour in heavy cream and chicken broth, bring to a simmer. Transfer mixture to the prepared baking dish.
- Sprinkle mozzarella and Parmesan cheeses evenly over the top.
- Bake for 25-30 minutes until bubbly and cheese is golden brown. Let stand 5 minutes before serving.
