Cheesy Chicken and Spinach Casserole with Mushrooms

A comforting and creamy casserole featuring tender chicken, fresh spinach, and savory mushrooms baked under a golden cheese crust.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 10 oz fresh spinach, chopped
  • 8 oz mushrooms, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add mushrooms and garlic, sauté until mushrooms are tender, about 5 minutes.
  3. Add spinach to the skillet and cook until wilted. Stir in chicken, Italian seasoning, salt, and pepper.
  4. Pour in heavy cream and chicken broth, bring to a simmer. Transfer mixture to the prepared baking dish.
  5. Sprinkle mozzarella and Parmesan cheeses evenly over the top.
  6. Bake for 25-30 minutes until bubbly and cheese is golden brown. Let stand 5 minutes before serving.
