Cheesy Chicken Broccoli Rice Casserole

A comforting and creamy casserole made with tender chicken, broccoli, rice, and plenty of cheese. This one-pot dish is easy to prepare and perfect for weeknight dinners.

Ingredients

  • 2 tablespoons butter
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 1/2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 1/4 cups white long grain rice, uncooked
  • 23 cups fresh broccoli florets
  • 10.5 oz cream of chicken soup (condensed)
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, separated
  • 1 sleeve Ritz crackers, crushed

Instructions

  1. Preheat oven to 350°F. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat butter in a large pot over medium heat. Add chicken and cook until golden brown, about 5 minutes. Remove and set aside.
  3. Add olive oil to the pot, then stir in rice and cook for 1 minute. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until rice is tender.
  4. Stir in broccoli, cover, and let stand for 5 minutes until broccoli is tender.
  5. Add cooked chicken, cream of chicken soup, milk, sour cream, and half of the cheddar cheese. Stir to combine.
  6. Transfer mixture to a lightly greased 9×13-inch casserole dish. Top with remaining cheese.
  7. Cover and bake for 15 minutes. Meanwhile, melt butter and mix with crushed crackers.
  8. Sprinkle cracker mixture over casserole and bake uncovered for 10 more minutes, until topping is golden and cheese is bubbly.
  9. Let stand for 5 minutes before serving.

Notes

For a shortcut, use rotisserie chicken and cooked rice. You can substitute frozen broccoli if fresh is not available. For extra crunch, use more crushed crackers on top.
