Cheesy Beef and Potato Casserole

A comforting, hearty casserole with layers of seasoned ground beef, tender potatoes, and melted cheese, baked to perfection.

For the Crust:

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1/2 cup sour cream
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened. Add ground beef, cook until browned. Drain excess fat.
  3. Stir in paprika, thyme, salt, and pepper. Add beef broth and simmer for 5 minutes. Remove from heat and mix in sour cream.
  4. Layer half the potato slices in the baking dish. Spread the beef mixture evenly over potatoes. Top with remaining potato slices and sprinkle cheese on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until potatoes are tender and cheese is golden.

Notes

You can customize the seasonings to taste.
