Cheesy Beef Chimichangas

Crispy fried tortillas stuffed with seasoned ground beef and melted cheese for a delicious Tex-Mex treat.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 tbsp vegetable oil
  • Sour cream and salsa for serving

Instructions

1. Prepare the Crust:

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add taco seasoning, onions, and bell peppers. Cook until vegetables are tender.
  3. Remove from heat and stir in both cheeses until melted.
  4. Divide the beef mixture evenly among tortillas, folding them into burrito shapes.
  5. Heat oil in a skillet and fry each chimichanga until golden brown on all sides.
  6. Drain on paper towels and serve hot with sour cream and salsa.
