Cheesy Beef Chimichangas

Crispy fried tortillas filled with seasoned ground beef, melted cheese, and savory spices for a satisfying Tex-Mex meal.

For the Crust:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1/2 cup refried beans
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • 2 cups vegetable oil for frying
  • Sour cream and salsa for serving

Instructions

1. Prepare the Crust:

  1. Brown ground beef with onions in a skillet, drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  2. Lay tortillas flat and spread refried beans in the center. Top with beef mixture and shredded cheese. Fold sides inward and roll tightly.
  3. Heat oil in a deep skillet to 350°F. Fry chimichangas 2-3 minutes per side until golden brown. Drain on paper towels.
  4. Serve hot with sour cream and salsa on the side.

Notes
