For the Crust:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup diced onions
- 1/2 cup refried beans
- 1 cup shredded cheddar cheese
- 6 large flour tortillas
- 2 cups vegetable oil for frying
- Sour cream and salsa for serving
Instructions
1. Prepare the Crust:
- Brown ground beef with onions in a skillet, drain excess fat, then stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
- Lay tortillas flat and spread refried beans in the center. Top with beef mixture and shredded cheese. Fold sides inward and roll tightly.
- Heat oil in a deep skillet to 350°F. Fry chimichangas 2-3 minutes per side until golden brown. Drain on paper towels.
- Serve hot with sour cream and salsa on the side.
