For the Crust:
- 4 large tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 2 tbsp fresh basil, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut the tops off the tomatoes and scoop out the seeds and pulp, leaving a thick shell.
- In a bowl, mix mozzarella, Parmesan, breadcrumbs, garlic, basil, olive oil, salt, and pepper.
- Stuff each tomato with the cheese mixture, pressing gently to fill completely.
- Place tomatoes in a baking dish and bake for 25-30 minutes until the tops are golden and tomatoes are tender.
- Let cool for 5 minutes before serving.
