For the Crust:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Make cheesecake filling: Beat cream cheese, powdered sugar, and lemon juice until smooth. Drop tablespoon-sized balls onto a parchment-lined plate and freeze for 30 minutes.
- Make cookie dough: Cream butter and sugars until fluffy. Beat in eggs and vanilla. Mix in flour, baking soda, and salt. Fold in chocolate chips.
- Take 2 tbsp of cookie dough, flatten slightly, place frozen cheesecake ball in center, and wrap dough around it. Place on baking sheet 2 inches apart.
- Bake for 12-14 minutes until edges are golden. Let cool on baking sheet for 5 minutes before transferring to wire rack.
