Cheesecake Stuffed Chocolate Chip Cookies

Soft and chewy chocolate chip cookies with a surprise creamy cheesecake center.

For the Crust:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Make cheesecake filling: Beat cream cheese, powdered sugar, and lemon juice until smooth. Drop tablespoon-sized balls onto a parchment-lined plate and freeze for 30 minutes.
  3. Make cookie dough: Cream butter and sugars until fluffy. Beat in eggs and vanilla. Mix in flour, baking soda, and salt. Fold in chocolate chips.
  4. Take 2 tbsp of cookie dough, flatten slightly, place frozen cheesecake ball in center, and wrap dough around it. Place on baking sheet 2 inches apart.
  5. Bake for 12-14 minutes until edges are golden. Let cool on baking sheet for 5 minutes before transferring to wire rack.

Notes

You can customize the seasonings to taste.
