For the Crust:
- 4 large apples (such as Honeycrisp or Granny Smith)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup rolled oats
- 1/4 tsp cinnamon
- 2 tbsp unsalted butter, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Core the apples, leaving the bottom intact to hold the filling.
- In a bowl, beat cream cheese, granulated sugar, and vanilla until smooth. Add egg and mix until fully incorporated.
- Fill each apple with the cheesecake mixture, leaving a little space at the top for the streusel.
- In another bowl, combine flour, brown sugar, oats, cinnamon, and melted butter to make the streusel topping.
- Sprinkle the streusel over the filled apples and place them in a baking dish. Bake for 25-30 minutes or until apples are tender and topping is golden.
- Let cool slightly before serving. Optional: drizzle with caramel sauce.
