For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup diced strawberries or fruit preserves
- 8 egg roll wrappers
- Oil for frying
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- In a bowl, mix cream cheese, sugar, and vanilla until smooth. Gently fold in diced strawberries or a spoonful of fruit preserves.
- Place an egg roll wrapper diagonally. Spoon 2 tablespoons of filling onto the center. Fold bottom corner over filling, then fold sides inward, and roll tightly. Moisten top corner with water to seal.
- Heat oil to 350°F (175°C). Fry egg rolls for 2-3 minutes per side until golden brown. Drain on paper towels. Dust with powdered sugar before serving.
