Ingredients
Scale
- 20 soft caramels
- 2 tablespoons heavy cream
- Approximately 2 sleeves of Ritz crackers
- 24 ounces chocolate almond bark
- Sea salt or sprinkles for topping
Instructions
- Place caramels and heavy cream in a medium-sized bowl.
- Microwave on high for 1 minute, then stir.
- Continue microwaving in intervals of 20 seconds, stirring well after each, until caramel is smooth.
- Put about 1 to 2 teaspoons of caramel on half of the Ritz crackers, spreading it but avoiding overflow.
- Top each caramel-covered Ritz cracker with another Ritz cracker to form sandwiches.
- Refrigerate the assembled sandwiches for at least 30 minutes to let the caramel set.
- Melt the chocolate almond bark according to package directions.
- Dip each Ritz cracker sandwich into the melted chocolate, ensuring full coverage.
- Place dipped cookies on parchment or foil-lined baking sheet, sprinkle with sea salt immediately.
- Refrigerate until the chocolate is set and firm.
- Enjoy the cookies chilled or at room temperature.
Notes
1. Use soft caramels for easy melting and a creamy texture.
2. Be careful not to overflow caramel when sandwiching the crackers to avoid mess.
3. Chocolate almond bark melts easily and gives a smooth coating; sea salt enhances the sweet-salty flavor contrast.
