Instructions

  1. Place caramels and heavy cream in a medium-sized bowl.
  2. Microwave on high for 1 minute, then stir.
  3. Continue microwaving in intervals of 20 seconds, stirring well after each, until caramel is smooth.
  4. Put about 1 to 2 teaspoons of caramel on half of the Ritz crackers, spreading it but avoiding overflow.
  5. Top each caramel-covered Ritz cracker with another Ritz cracker to form sandwiches.
  6. Refrigerate the assembled sandwiches for at least 30 minutes to let the caramel set.
  7. Melt the chocolate almond bark according to package directions.
  8. Dip each Ritz cracker sandwich into the melted chocolate, ensuring full coverage.
  9. Place dipped cookies on parchment or foil-lined baking sheet, sprinkle with sea salt immediately.
  10. Refrigerate until the chocolate is set and firm.
  11. Enjoy the cookies chilled or at room temperature.
