For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 1/2 cups finely chopped apples
- 1/2 cup chopped walnuts
- 1/2 cup caramel sauce for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk together flour, baking soda, salt, and cinnamon in a medium bowl.
- Cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately add flour mixture and buttermilk to butter mixture, beginning and ending with flour. Fold in apples and walnuts.
- Divide batter evenly among muffin cups. Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool muffins for 5 minutes in pan, then transfer to wire rack. Drizzle with caramel sauce while warm.
