- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C) and line muffin tins with liners.
- In a medium bowl, sift together flour, baking powder, baking soda, salt, and cinnamon; set aside.
- In a large bowl, cream softened butter with granulated and brown sugars until smooth.
- Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
- Alternately add dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients; mix until just combined.
- Fold in diced apples and chopped walnuts gently.
- Divide batter evenly into muffin cups.
- Bake for 18-22 minutes or until a toothpick inserted into the muffin (avoiding caramel center if used) comes out clean and tops are golden brown.
- Allow muffins to cool in pan for 5 minutes, then transfer to wire rack.
- Warm caramel sauce slightly and drizzle over cooled muffins before serving.
Notes
Use fresh, crisp apples for the best texture. To enhance the caramel flavor, you can place a soft caramel candy in the center of each muffin before baking. Let the caramel drizzle cool slightly before applying to avoid melting the muffins’ tops.
