  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup buttermilk
  • 1/2 cup chopped walnuts
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tins with liners.
  2. In a medium bowl, sift together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large bowl, cream softened butter with granulated and brown sugars until smooth.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Alternately add dry ingredients and buttermilk to the wet mixture, beginning and ending with dry ingredients; mix until just combined.
  6. Fold in diced apples and chopped walnuts gently.
  7. Divide batter evenly into muffin cups.
  8. Bake for 18-22 minutes or until a toothpick inserted into the muffin (avoiding caramel center if used) comes out clean and tops are golden brown.
  9. Allow muffins to cool in pan for 5 minutes, then transfer to wire rack.
  10. Warm caramel sauce slightly and drizzle over cooled muffins before serving.

Notes

Use fresh, crisp apples for the best texture. To enhance the caramel flavor, you can place a soft caramel candy in the center of each muffin before baking. Let the caramel drizzle cool slightly before applying to avoid melting the muffins’ tops.
