For the Crust:
- 3 medium carrots, peeled and chopped
- 3 eggs
- 1 cup vegetable oil
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup cocoa powder
- 1 cup milk
- 1 tablespoon butter
- 1 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (180°C). Grease and flour a 9×13-inch baking pan.
- In a blender, combine carrots, eggs, and oil. Blend until smooth.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Pour in the carrot mixture and stir until well combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- For the glaze, heat milk and butter in a saucepan over medium heat until butter melts. Whisk in cocoa powder and powdered sugar until smooth.
- Pour the warm glaze over the cooled cake. Let it set before slicing and serving.
