Brazilian Carrot Cake with Chocolate Glaze

A moist and fluffy Brazilian-style carrot cake topped with a rich chocolate glaze.

For the Crust:

  • 3 medium carrots, peeled and chopped
  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cocoa powder
  • 1 cup milk
  • 1 tablespoon butter
  • 1 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (180°C). Grease and flour a 9×13-inch baking pan.
  2. In a blender, combine carrots, eggs, and oil. Blend until smooth.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt. Pour in the carrot mixture and stir until well combined.
  4. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  5. For the glaze, heat milk and butter in a saucepan over medium heat until butter melts. Whisk in cocoa powder and powdered sugar until smooth.
  6. Pour the warm glaze over the cooled cake. Let it set before slicing and serving.
