Boston Cream Pie Cookie Bites

A fun, bite-sized twist on the classic Boston Cream Pie, featuring soft vanilla cookies, creamy custard filling, and a rich chocolate glaze.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup vanilla pudding or pastry cream
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar. Add egg yolk and vanilla, then mix in flour and salt until a soft dough forms.
  3. Roll dough into 1-inch balls and place on baking sheet. Bake for 10-12 minutes until edges are lightly golden. Let cool completely.
  4. Spoon or pipe a small amount of vanilla pudding onto the flat side of half the cookies. Top with remaining cookies to form sandwiches.
  5. Melt chocolate chips with heavy cream, stirring until smooth. Drizzle or dip each cookie bite in chocolate glaze. Let set before serving.

Notes

You can customize the seasonings to taste.
