For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup vanilla pudding or pastry cream
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream together butter and sugar. Add egg yolk and vanilla, then mix in flour and salt until a soft dough forms.
- Roll dough into 1-inch balls and place on baking sheet. Bake for 10-12 minutes until edges are lightly golden. Let cool completely.
- Spoon or pipe a small amount of vanilla pudding onto the flat side of half the cookies. Top with remaining cookies to form sandwiches.
- Melt chocolate chips with heavy cream, stirring until smooth. Drizzle or dip each cookie bite in chocolate glaze. Let set before serving.
