For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup prepared vanilla pudding or custard
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
- Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Bake 45-50 minutes until center is set. Cool completely, then refrigerate 4 hours.
- Spread vanilla pudding over chilled cheesecake. Refrigerate 1 hour.
- Heat heavy cream until simmering, pour over chocolate, let sit 2 minutes, then stir until smooth. Spread over pudding layer.
- Chill at least 2 hours before serving.
