For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup prepared vanilla pudding or custard
- 1/2 cup heavy cream
- 4 oz semi-sweet chocolate, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Bake for 45-50 minutes until center is set. Cool completely, then spread custard layer over cheesecake.
- Heat cream until steaming, pour over chocolate, let sit 2 minutes, then stir until smooth. Spread ganache over custard layer. Chill 4 hours before serving.
