Blueberry Pudding Cake

A delicious and moist cake with a layer of juicy blueberries that forms a pudding-like texture as it bakes.

For the Crust:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1 cup boiling water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. Stir in milk, melted butter, and vanilla extract until just combined. Spread batter into the prepared baking dish.
  4. Sprinkle blueberries evenly over the batter, then sprinkle brown sugar on top.
  5. Pour boiling water over the entire mixture (do not stir).
  6. Bake for 30-35 minutes, or until the top is golden and the blueberries are bubbling. Let cool slightly before serving.
