For the Crust:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 tablespoons melted butter
- 2 cups fresh or frozen blueberries
- 3/4 cup boiling water
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar. Stir in milk and melted butter until just combined. Spread batter evenly in prepared dish.
- Scatter blueberries evenly over the batter. In a small bowl, mix boiling water, brown sugar, and lemon juice until sugar dissolves. Gently pour over blueberries and batter.
- Bake for 35-40 minutes until cake is golden and a tester comes out clean. Let stand 10 minutes before serving.
