Blueberry Pudding Cake

A delightful dessert with a tender cake layer floating atop a sweet blueberry sauce.

For the Crust:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 2 cups fresh or frozen blueberries
  • 3/4 cup boiling water
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, and granulated sugar. Stir in milk and melted butter until just combined. Spread batter evenly in prepared dish.
  3. Scatter blueberries evenly over the batter. In a small bowl, mix boiling water, brown sugar, and lemon juice until sugar dissolves. Gently pour over blueberries and batter.
  4. Bake for 35-40 minutes until cake is golden and a tester comes out clean. Let stand 10 minutes before serving.
