For the Crust:
- 6 cups mixed greens (spinach and arugula)
- 2 ripe peaches, sliced
- 1 cup fresh blueberries
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped walnuts, toasted
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the mixed greens, sliced peaches, blueberries, red onion, and toasted walnuts.
- In a small bowl, whisk together the olive oil, honey, lime juice, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Sprinkle the crumbled feta cheese over the top just before serving.
