For the Crust:
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup fresh blueberries
- 1 tbsp cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla.
- Gradually mix in dry ingredients until just combined. Gently fold in blueberries coated with cornstarch.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Drop tablespoonfuls of cookie dough onto prepared sheets. Make an indentation in the center of each cookie and fill with cream cheese mixture.
- Bake for 12-15 minutes or until edges are golden. Cool on baking sheets for 5 minutes before transferring to wire racks.
