Blueberry Cheesecake Cookies

Soft, chewy cookies with creamy cheesecake filling and bursts of fresh blueberries.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup fresh blueberries
  • 1 tbsp cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually mix in dry ingredients until just combined. Gently fold in blueberries coated with cornstarch.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  6. Drop tablespoonfuls of cookie dough onto prepared sheets. Make an indentation in the center of each cookie and fill with cream cheese mixture.
  7. Bake for 12-15 minutes or until edges are golden. Cool on baking sheets for 5 minutes before transferring to wire racks.

Notes

You can customize the seasonings to taste.
