Blueberry Breakfast Quesadilla

A sweet and satisfying breakfast twist on the classic quesadilla, filled with creamy cheese and bursting blueberries.

For the Crust:

  • 2 large flour tortillas
  • 1/2 cup cream cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon butter
  • Powdered sugar for dusting (optional)

Instructions

1. Prepare the Crust:

  1. In a small bowl, mix together cream cheese, honey, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over one side of each tortilla. Sprinkle blueberries over one tortilla, then place the other tortilla on top, cream cheese side down.
  3. Melt butter in a skillet over medium heat. Carefully place the quesadilla in the skillet and cook for 3-4 minutes per side, until golden brown and crispy. Slice into wedges and dust with powdered sugar if desired.

Notes

You can customize the seasonings to taste.
