For the Crust:
- 1 sheet puff pastry, thawed
- 100g blue cheese, crumbled
- 50g walnuts, roughly chopped
- 1 tbsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface into a rectangle.
- Brush the pastry with olive oil, then sprinkle evenly with blue cheese, walnuts, thyme, salt, and pepper.
- Roll the pastry tightly from the long side into a log, then slice into 2cm thick rounds.
- Place the rounds on the baking tray, slightly apart, and brush with beaten egg.
- Bake for 20-25 minutes until golden and puffed. Serve warm.
