- 1 box of cherry tomatoes, sliced in half
- 1 head of romaine lettuce, cleaned and chopped
- Dressing:
- 1/4 cup red onion, chopped finely
- 2/3 cup plant-based mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon minced garlic (about 2 cloves)
- Salt to taste
- Pepper to taste
