Blackberry Pistachio Dream Bars

A delightful dessert bar with a buttery crust, sweet blackberry filling, and crunchy pistachio topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, cold and cubed
  • 1 1/2 cups blackberry jam
  • 1/2 cup chopped pistachios
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Press mixture into the prepared pan. Bake for 15 minutes or until lightly golden.
  4. Spread blackberry jam evenly over the baked crust.
  5. In a small bowl, mix chopped pistachios, granulated sugar, and vanilla extract. Sprinkle over the jam layer.
  6. Bake for another 15 minutes or until the topping is lightly toasted. Let cool completely before cutting into bars.
