For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 1/2 cups blackberry jam
- 1/2 cup shelled pistachios, chopped
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a bowl, mix flour, softened butter, granulated sugar, and salt until crumbly. Press into the prepared pan to form the crust.
- Bake the crust for 15 minutes, or until lightly golden. Remove from oven and let cool slightly.
- Spread blackberry jam evenly over the crust.
- In another bowl, combine chopped pistachios, brown sugar, and vanilla extract. Sprinkle this mixture over the jam layer.
- Bake for another 15 minutes, or until the topping is golden and the jam is bubbly. Let cool completely before cutting into bars.
