Black Pepper Asiago Crackers

Crispy, savory homemade crackers with sharp Asiago cheese and a bold kick of black pepper.

For the Crust:

  • 1 cup all-purpose flour
  • 1 cup grated Asiago cheese
  • 1/2 teaspoon salt
  • 1 tablespoon freshly cracked black pepper
  • 4 tablespoons cold unsalted butter, cubed
  • 34 tablespoons ice water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, combine flour, Asiago cheese, salt, and black pepper. Pulse to mix. Add cold butter and pulse until mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time, pulsing until dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  4. Roll dough out on a floured surface to 1/8-inch thickness. Cut into desired shapes and place on prepared baking sheet.
  5. Bake for 12-15 minutes, or until edges are golden. Cool completely on a wire rack before serving.

Notes

You can customize the seasonings to taste.
