Best Southern Vanilla Butter Pecan Cake

A rich and moist vanilla cake loaded with buttery pecans, perfect for any occasion.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup chopped pecans
  • 3 large eggs
  • 1/2 cup whole milk
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add the flour mixture and milk to the butter mixture, mixing until just combined. Fold in chopped pecans.
  5. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
