For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add egg, molasses, and vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Scoop tablespoon-sized portions of cookie dough, flatten slightly, and place a teaspoon of cream cheese filling in the center. Fold dough over filling and roll into a ball.
  7. Place cookies on prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes or until edges are set.
  8. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
