Easy Ground Beef and Parmesan Tortellini

Ingredients

  • 1 pound ground beef
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon double-concentrated tomato paste
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1/2 cup chicken or beef broth
  • 1 pound cheese tortellini
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Add ground beef to a skillet and cook over medium-high heat, breaking it up with a spoon, until browned and no longer pink, about 5-6 minutes. Drain excess grease if necessary.
  2. Season the beef with Italian seasoning, salt, black pepper, and red pepper flakes if using.
  3. Push the beef mixture to one side of the skillet and add tomato paste to the center. Cook for about 1 minute, stirring occasionally, until slightly caramelized, then mix into the beef.
  4. Stir in frozen peas and heat for 1-2 minutes.
  5. Add heavy cream and chicken or beef broth, stir well, and bring to a gentle simmer. Cook for 3-4 minutes.
  6. Meanwhile, cook cheese tortellini according to package directions until al dente. Drain and set aside.
  7. Add cooked tortellini to the skillet and stir to coat with the creamy tomato sauce.
  8. Gradually stir in grated Parmesan cheese until melted and sauce thickens slightly.
  9. Taste and adjust seasoning if needed.
  10. Garnish with chopped fresh parsley and extra Parmesan cheese if desired. Serve warm.

Notes

Brown the ground beef thoroughly for maximum flavor. Cook tortellini separately to prevent sogginess. Adjust seasoning to taste for the best flavor balance.
