Beef Lombardi

A comforting casserole with layers of ground beef, tomatoes, cheese, and noodles.

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz wide egg noodles, cooked
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown ground beef with onion over medium heat. Drain excess fat.
  3. Stir in diced tomatoes, tomato sauce, garlic powder, salt, and pepper. Simmer for 5 minutes.
  4. In a greased 9×13-inch baking dish, layer half of the cooked noodles, followed by half of the beef mixture, half of the sour cream, and half of the cheddar cheese. Repeat layers.
  5. Sprinkle Parmesan cheese on top.
  6. Bake for 25-30 minutes until bubbly and cheese is melted.

Notes

You can customize the seasonings to taste.
