Classic Bean Salad

A refreshing and protein-packed bean salad with a tangy dressing.

For the Crust:

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 red onion, finely diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine kidney beans, garbanzo beans, black beans, red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper.
  3. Pour dressing over bean mixture and toss gently to combine.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
