For the Crust:
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 red onion, finely diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine kidney beans, garbanzo beans, black beans, red onion, bell pepper, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper.
- Pour dressing over bean mixture and toss gently to combine.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
