Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 cup sugar
- 1 1/4 teaspoons baking powder
- 2/3 cup butter, softened
- 2 eggs
- 4 ripe bananas, mashed with a fork
- 2/3 cup buttermilk
- 1 cup walnut pieces
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease and flour a 9-inch round cake pan
- Combine flour, sugar, baking powder, salt, and cinnamon in a bowl
- Cream butter and sugar until fluffy
- Beat in eggs one at a time until creamy
- Add mashed bananas and buttermilk alternately with flour mixture
- Fold in toasted walnut pieces
- Pour batter into prepared pan
- Bake for 35-45 minutes until a toothpick inserted in the center comes out clean
Notes
The moisture content in bananas varies by age and size, which may cause the batter to appear curdled when adding eggs, but this is normal and the cake will still bake perfectly. This is a forgiving recipe that comes together during baking. For best results, use ripe bananas and toast walnuts before adding for enhanced flavor.
